Vin Chocolat Noir Wine

IN THE BOTTLE 

Notes of chocolate (of course!), red cherry, raspberry, vanilla, and blackberry. Full bodied with gentle tannins and a soft finish, the flavor is reminiscent of a cherry Tootsie Pop.

CLASSIC FLAVOR PROFILES OF VARIETAL 

Like most chocolate wines, ours infuses red wine with chocolate flavoring. Some chocolate wines also contain dairy products like cream, but we skip the cream to get a pure chocolate flavor that compliments the red wine. 

VARIETAL FACTS 

Chocolate undergoes fermentation, just like wine. In chocolate, the sugar ferments into alcohol, and then undergoes a second fermentation. This double fermentation enhances the complex flavors that we associate with chocolate, which are accentuated by drying and roasting the cacao. 

HISTORY

Both chocolate and wine are similar in many ways. Both have multiple varieties that are cultivated in specific regions of the world, getting character from variety and terroir. They also can be process intensive, with winemakers deciding how to ferment and age their wines while chocolate makers deciding on how to roast their cacao and how much sugar to add. Both have tannins and even use similar terms for their tasting notes: words like fruity, nutty, buttery, and spicy are used with chocolate and wine. 

DID YOU KNOW? 

Although the word noir is in the name, there is no Pinot Noir in the blend. The term vin noir literally means "black wine" in French and refers to the dark chocolate flavor of the wine.
