A blend of Cabernet Sauvignon, Durif (Petite Sirah), Petit Verdot, and Merlot from the
Baja, Mexico. Aromas of black cherry, blackberry jam, cedar, coffee, and dried herbs.
CLASSIC FLAVOR PROFILES OF VARIETAL
We chose to use minimal oak aging to let the natural black cherry and blackberry of
Cabernet Sauvignon shine. Durif and Petit Verdot add richness and body, while Merlot
adds a touch of softness that helps round out the blend.
VARIETAL FACTS
Cabernet Sauvignon in northern Baja’s Valle de Guadalupe benefits from strong Pacific
influences. Cool marine air and fog funnel inland through gaps in the coastal range,
moderating daytime heat and extending the ripening season. Soils are well-drained,
pushing vines to root deeply, which helps concentrate flavor and tannin. Compared with
Bordeaux, Baja’s overall growing season is warmer and drier, with much less summer
rainfall, so water stress and sun exposure must be carefully managed. Yet, like
Bordeaux, the maritime influence helps preserve acidity and aromatic freshness in
Cabernet.
HISTORY
Spanish missionaries brought viticulture to Baja in the late 17th and 18th centuries,
planting vines to supply sacramental wine. Although the Spanish Crown briefly
restricted commercial winemaking, Baja’s remoteness let monastic plantings persist,
creating a continuous wine culture that has persisted to this day.
