Prosecco Wine
IN THE BOTTLE
Prosecco is a sparkling wine from the Veneto region of northeastern Italy, about an hour northwest of Venice. Fresh and bubbly, notes of peach and white flowers are framed by honey and citrus, including lime and candied lemon.
CLASSIC FLAVOR PROFILES OF VARIETAL
Prosecco is made from the Glera grape. Glera has a fresh and fruity personality that melds well with bubbles. The secondary fermentation that creates the bubbles occurs via the Charmat method. In this process, wine is placed in large tanks and sugar and yeast are added. As the yeast ferments the sugar and releases carbon dioxide, the carbon dioxide is trapped in tank and naturally carbonates the wine. Because this process occurs in tank, rather than individual bottles, it preserves the fresh, fruit forward style of Prosecco.
VARIETAL FACTS
Italian wine is highly regulated and the paper tag on the neck of the bottle is the seal from the organization that runs Prosecco. This seal means that the wine inside followed all the rules specified for Prosecco production including what grapes are allowed in the blend, what the minimum alcohol of the wine must be, the number of grape vines you can plant per acre, and even the maximum amount that you can harvest from your vineyards.
HISTORY
The original Bellini (a cocktail made with Prosecco and white peach puree) was invented at the legendary Harry's Bar in Venice, a favorite spot for celebrities like Orson Welles, Truman Capote, and Ernest Hemingway. The restaurant also invented beef Carpaccio! In Venice, nearly every bar pours glass after glass of Prosecco, which the civilized Venetians consider "ombretta." Literally translated it means "little shadow," but Venetians use it as a slang term for a pick-me-up.
DID YOU KNOW?
Prosecco was not always sparkling. Like many famous sparkling wine regions, Prosecco started off making still wines, but it was not until the mid-19th century that the first sparkling wines were made in the area.
