A blend of Chardonnay and Colombard, there are aromas green apple, peach, lemon, white flowers, and pear on the nose with a creamy texture and a hint of sweetness on the palate.

Chardonnay contributes green apple, citrus, and pear along with a brisk acidity. Colombard adds playful aromas of white peach and honeysuckle. A quick addition of bubbles creates a clean, crisp flavor and lets the beautiful aromatics of our Blanc de Blanc shine through.
VARIETAL FACTS
Blanc de Blanc translates from French as "white from white." For sparkling wine, this means that it is only made from white grapes. In France, the Champagne region is known for growing three grapes, one is white (Chardonnay) and two are red (Pinot Noir and Munier). When the Champenoise make a white sparkling wine only Chardonnay, they call it a blanc de blanc, while a blanc de noir is created by making a white sparkling wine from red (noir) grapes. Because our sparkling wine uses two white grapes, Chardonnay and Colombard, we have named it Blanc de Blanc.
HISTORY
The tradition of using sabers to open bottles of wine dates to the days of Napoleon. When the French army was marching through the Champagne region, the calvary officers had a dilemma when they were on horseback: you need both of your hands to open a bottle of Champagne, but you also need to keep at least one hand on the reins of your horse. The solution? Use your sword to crack open the bottle! An officer could easily use the same hand to hold the reins and the bottle, while their free hand pops open the bottle with their saber. This is the reason that sparkling wine sabers are shaped like a 19th century French calvary officer's sword.
