CLASSIC FLAVOR PROFILES OF VARIETAL 

Blood oranges have a unique raspberry-like flavor in addition to regular orange flavors. The color of blood oranges comes from anthocyanins, the same chemical compounds that give grape skins their color. For this color to develop, the oranges must have low temperatures at night: the colder the temperature, the darker the fruit. 

VARIETAL FACTS 

To create a balanced sangria, we start with blood orange and pineapple juices in a white wine base, but also add apple, lemon, and passion fruit concentrates. The wine is then sweetened and carbonated before bottling. 

HISTORY 

Pineapples are indigenous to South America and Europeans were fascinated by them. Pineapples do not travel well, and the plants do not thrive in chilly weather, so the fruit was a rarity in Europe. Eventually, some of the first greenhouses in England were built in the 17th and 18th centuries to grow pineapples and other fruits from the Americas. These greenhouses had to be heated constantly during the colder months, resulting in extremely expensive fruit. Pineapples were so rare yet powerful as status symbols that they would repeatedly be rented out as displays at dinner parties until they began to rot. This rarity, though, made the pineapple the ultimate symbol of hospitality.
